Every year Dorothy plants a bed of carrots. They are always very crisp and sweet and we love them. The big difference is that she prepares them to winter over by cutting the tops off with a weed whacker and then covering them with a big straw-filled blanket. They stay fresh and nice all winter and we can dig them at our leisure. Finally near the end of April we have to dig the ones remaining because they start to regrow and send out lots of new rootlets that don't taste so good. These photos are of the April dig.

Carrot digging time

How amazing you are! We used to have a national expert on agriculture as a friend. He told us the carrots dont' go sweet until they get really cold. No wonder yours are so good! I'll be right down there Monday to sample some!
